HERE IT IS!
St. Louis-style ribs are spare ribs with the sternum bone, cartilage and rib tips removed to create a rectangular-shaped rack. We love this cut of ribs and have fine tuned our process to bring out it's flavor, & fall off the bone tenderness.

 

OUR PROCESS
From start to finish we use fresh local ingredients. We first hand select our St. Louis cut pork ribs. These ribs are our passion and we always start with the best. We rub our ribs with our own secret blend of spices. We then smoke them low and slow to bring out that
rich flavor.

 

RUBBED
Our Old No. 17 dry Rub is legendary and is inspired by both  local and traditional BBQ.  We season all of our meat with this powerful blend of spices. Combined with low heat and smoke, this rub caramelizes creating a barrier that keeps our meat juicy and tender.

 

SMOKED
Our ribs are always low smoked a minimum of 4 hours. We use a blend of apple, hickory and oak smoke. This smoke trifecta gives our ribs a unique and distinguished quality that separates the competition.

 

SERVED
